Huevos Rancheros


1tsp clarified butter oil

2ea shell eggs

1 12in flour tortilla

2oz diced red potatoes

2oz diced russet potatoes

1/2oz diced yellow onions

1tsp Seasoned Salt

1/2tbs canola oil

4oz cooked black beans (salt, pepper, onions, cumin, chili powder, cilantro)

4oz of your favorite green chili recipe

1oz sour cream

1oz your favorite pico di gallo recipe

1 TBS sliced green onions


1. Place a warm flour tortilla on a large 12in plate

2. Cook the eggs with the clarified butter oil to our desired liking (over medium is how its served at Wild Eggs)

3. Place cooked eggs on the flour tortilla

4. Roast potatoes and diced yellow onions with seasoned salt in oven for 20 minutes, place into non stick pan after roasted and cook until golden brown

5. Place potatoes and beans on plate

6. Garnish with your favorite green chili over the eggs and add sour cream, pico de gallo and sliced green onions
