Apple Breakfast Fritters

  • 1 medium apple, peeled and cored
  • 1 egg
  • 1 slice bread, cut in pieces
  • 1/8 tsp. vanilla
  • 1 Tbsp. water
  • 4 tsp. sugar
  • Dash of cinnamon

Grate apple and set aside. Combine all ingredients, except apple, in blender. Blend until mixture is smooth. Fold in grated apple; mix well. Drop by tablespoons onto a hot nonstick skillet, or pour out one enormous fritter. Cook on both sides to a golden brown. Makes 1 serving.

VARIATIONS:

Blueberry Fritters: omit apple. Fold 1/2 cup crushed blueberries into blended egg-bread mixture. Bake as stated.

Pineapple Fritters: Omit apple. Fold 2 slices of canned pineapple cut into very small pieces into blended egg-bread mixture. Bake as stated.
