Mango Pico

  • 3 ripe mangoes, peeled, pitted and diced
  • 3 ripe tomatoes, seeded and diced
  • 1/4 sweet onion or 4 green onions, chopped
  • 1-2 fresh hot chilies, seeded and minced
  • juice of two limes
  • 1/4 cup chopped fresh cilantro
  • salt, pepper and sugar to taste
  • Combine first 6 ingredients in a glass or ceramic bowl. Taste and adjust with salt and pepper. If mangoes are not sweet enough, adjust with a little sugar. Refrigerate at least 2 hours to marry flavors. Serve with grilled pork, chicken, or seafood.
