3-4 pound pork rib-end roast (bone-in or boneless)
salt and pepper
1/2 cup orange marmalade
1/4 cup Sweet Thai Chilli sauce
2-3 T. lemon juice
1 TBS ground ginger
Season roast with salt and pepper and place in a shallow pan. Roast at 250 degrees to an internal temperature of 130. Raise oven to 500 degrees and continue to roast to 150 degrees internal.
While roasting, combine remaining ingredients and use as a basting sauce during last few minutes of cooking. Remove, cover and rest 10 minutes. Slice and serve with more sauce. Serves 6-8 .
