Southwestern Peppered Pork

  • 1 tsp ground cumin
  • 1 tsp sea salt
  • 1.5 tsp coarsely cracked pepper medley
  • 1 large pinch cayenne pepper
  • 2 tsp ground coriander
  • 4 cloves garlic -- finely chopped
  • 2 TBS olive oil
  • 4-6 pork loin chops, 3/4 inch thick

Pre-heat grill. Stir together cumin, salt, cracked pepper, cayenne, coriander, garlic and olive oil in a small bowl until well mixed. Rub on both sides of chops.

Grill chops over high flame, turning once, until crispy on the outside and still slightly pink near bone, approximately 8-12 minutes total.
