Loin or rib lamb chops
Olive oil
Lemony grilling pepper
Mint sauce or mint jelly

Brush chops with olive oil, sprinkle with Lemony Grilling Pepper, and grill over a high flame to brown quickly. Remove at rare or medium rare, cover with a clean towel, resting for five minutes to finish cooking. Serve with mint sauce or mint jelly.
