Gas Grilled, Or Cedar Board Smoked Salmon
Marinate or season fish to taste. Soak a large handful of wood chips in water for at least 20 minutes. Remove cooking grate and light gas grill. Wrap chips in a flat foil bundle, poke full of small holes and place on top of burners, return grate. When hot, brush grate clean.
Brush salmon with olive oil and season with salt and pepper (or season/marinate to your liking). Once wood chips are smoking, spray or wipe the hot grate with oil. Place salmon face down on grate. Cover grill and cook over a medium-high flame until grill marked, 4-7 minutes. Carefully turn over, reduce heat and cook covered until just done, 4-7 minutes longer.
Cedar Board Grill Smoking
Marinate or season salmon. Soak untreated cedar boards (larger than the salmon you are cooking) in water for at least 4 hours. Place salmon on boards, on the grill, adding veggies if desired.
