4 simple switches for a healthier BBQ

The unofficial start to summer is almost upon us and that means a chance to chow down on some of your favorite foods at your backyard BBQ.  But with summer coming and everyone baring more skin you can have your cake and eat it too, by keeping the flavor and cutting the fat.

Chef Brad Brunin from True Food Kitchen gives his list of healthier alternatives.

1.  Bison Burgers:  Burgers are a barbecue staple, but you can cut down on fat and calories by using bison instead of beef.  The flavor is a little gamey, but Chef Brad says you can mask it with caramelized onions, parmesan cheese, and roasted mushrooms.  Drop the fries and pair it with a healthy kale salad; or sautee’ sweet potatoes until they caramelize if you have a potato fan in your midst.

2.  Mediterranean Salad:  Toss the pasta salad and replace it with a heart healthy Mediterranean salad.  The True Food Kitchen version replaces pasta with quinoa which is high in fiber and protein, top it with grilled tofu.  Chef Brad says the key to great tasting tofu is marinating with a little sugar to get a nice caramelized flavor on top, he suggests teriyaki sauce. 

3.  Cru de Tet:  You can keep the crunch without the calories by ditching the chips and opting for fresh veggies.  Just head to your local farmer’s market and grab what you like, wash it and put it on ice in a bowl.  It doesn’t get much easier than that.  Look to healthy hummus as a dipping option, made from chickpeas it’s a great vegan option.

4.  Watermelon and Tomato Salad:  Forget syrupy fruit salad that will only add to your waistline, this salad uses the freshest flavors of the season and it couldn’t be any simpler to throw together.  Combine cubed watermelon, chopped tomatoes, goat cheese, cashews, and basil.  Top it with a sprinkle of salt and pepper and you’ll be ready for summer.
