Wild Eggs Creole Omelette

1 oz Cajun Seasoned Shrimp (celery salt, paprika, cayenne pepper, black pepper, salt)

1 oz Diced Bell Peppers -red and green

1 oz Diced Onions- red and yellow

1 oz Sliced Andouille Sausage

1 oz Shredded Cheddar Jack Cheese

4 whole Shell Eggs

1 TBS Butter Oil (half clarified butter and half canola oil)

1 tsp Cajun Seasoning- see above

1 tsp Fresh Herb Mix (chopped parsley and chives)

1 oz Cajun hollandaise (hollandaise mixed with 1tsp Cajun seasoning)

Method of Preparation:
1. Brush omelet pan with butter oil. Add shrimp, peppers, onions, Andouille and eggs

2. Slowly heat ingredients until eggs begin to coagulate

3. Bleed omelet then flip in pan

4. Cook until eggs are firm and add cheese. Fold omelet onto a plate.

5. Cover omelet with Cajun hollandaise and garnish with herb mix

6. Serve with choice of side
