Recipe from Wild Eggs

Lox and Bagel Bennie

Ingredients: 

2 whole eggs-poached medium 

1 mini bagel

3oz smoked salmon (lox)

1oz cream cheese

2oz hollandaise- previous segment this was made (see recipe)

1tsp capers

1TBS diced roma tomatoes

1tsp small diced red onions

1tsp chopped parsley

Sprinkle of smoked paprika

2oz butter oil

Procedure:

1.       Poach eggs to desired doneness.

2.       Toast bagel in pan with butter oil

3.       Add cream cheese and smoked salmon onto each half of bagel

4.       Place eggs on top of salmon and top with hollandaise

5.       Garnish with capers, onions, tomatoes, parsley, paprika and serve
