Sounds fancy, but easy to make!

Colorado Lamb Ragu

4 servings

1oz oil

1T chopped garlic

1T diced shallots

1lb Cooked beans

8oz lamb sausage

4oz cherry tomatoes

4oz red wine

1/2 cup Demi glace

1/4 cup butter

Salt and Pepper to taste


Heat oil in a sauté pan

Brown the Lamb Sausage

Add garlic and shallots and cook down

Add tomato and cook until soft

Add beans and sauté for a min

Add red wine and cook down by half

Add demi glace and simmer

Finish with butter off of the heat

Season with salt & pepper to taste

Top with perfectly cooked leg of lamb
