Tomato Sauce
1 lb. fresh plum tomatoes
¼ lb. butter
1 medium onion, diced
salt
¼ tsp. sugar
Halve the tomatoes lengthwise and cook covered for 10 minutes. Purée the tomatoes and return them to the pot. Add the butter and onion plus 1 1/2 teaspoons salt and the sugar. Cook the tomatoes uncovered for 45 minutes. Taste; discard the onion.
