Zagaglione with berries
Yield: 8 Servings
½ c. sugar
1 c. semi sweet champagne or sparkling wine
1 pt each strawberries, blackberries, raspberries, blueberries
Cut the strawberries in quarters and combine with the remaining berries, dust with 3T of sugar and macerate for 10 to 15 minutes.
Combine the remaining ingredients in the top of a double boiler. Beat over hot water until the custard is thick, light, and fluffy. Chill mixture over an ice bath.
To assemble layer the berries in the bottom of a parfait glass then add a layer of the sabayon, continue layering the berries & sabayon until the glasses are full, chill for 10 minutes and serve.
