Wild Eggs: Roasted garlic & mushroom scramble

What you need:

 

 

 

1oz of mushroom mix sliced (shitake, Portobello, Crimini, Oyster, Button)

1tsp butter

1tsp salt and pepper mix

3 XL eggs

1tsp Roasted Garlic Puree

2TBS Goat Cheese

1tsp herb mix (parsley and chives)

1tsp White truffle oil

1TBS clarified butter and canola oil mixture (equal parts)

 

1.Roast mushrooms, butter and salt and pepper mix in a casserole dish for 30 minutes at 300F

2.Place the clarified butter/oil mixture into a non-stick skillet with roasted mushrooms, roasted garlic and 3 whipped eggs.

3.Let cook on medium high heat until eggs begin to coagulate. Flip eggs in the pan continuously until the product has set up.

4.Place on desired plate and add the goat cheese, herb mix and truffle oil on top to serve
