Trout with Bacon and Brie with White Balsamic Lime dressing
Serves Two; Recipe Provided By McCormick's

2- 8oz Trout Fillets 3 oz Bacon (Apple wood Smoked works great) 3 oz Brie Cheese 12 each raspberries 10 oz Mixed Greens 1 each Yellow Onion (Cut into thin rings) 4 oz Lime Dressing (to follow) 2 cups a/p flour 2 cups Buttermilk 2 tbs. chili powderDressing
Chili Onion Rings
Season Trout with salt and Pepper
For baking:
Place trout on a baking sheet
Top with Raw Bacon and then brie Cheese
Cook for 5-6 minutes at 400 degrees
For Pan Searing
In non stick pan, heat pan and add olive oil, cook troutsSkin side up first until just brown. Turn and top cooked side with Bacon and then brie cheese. Cover and cook until bacon is slightly browned and cheese is melted 5-6 minutes.For the grilling
Slightly cook bacon on the grill. Brush Trout with Olive Oil and place skin side up on a med-high grill. Cook 2-3 minutes and turn top with Bacon and then Brie cheese. Cook until cheese is MeltedIn large mixing bowl combine mixed greens and onion rings. Toss with Lime Dressing Arrange on serving plate. Top with Trout and Garnish with RaspberryIt is a real easy dish with all kinds of variations
- 6 oz Extra Virgin Olive Oil 2 oz White Balsamic Vinegar 1 oz Honey Juice of 2 Limes Salt and Pepper to taste
- Combine Flour and Chili Powder Pour Buttermilk in bowl and add onions let soak 2-5 minutes strain onions and dredge in the flour mix Fry in shallow oil until golden brown Place on paper towel and set aside
