Cucumber, Mango and Black Bean Salad

This nutrient dense salad would make a great accompaniment to any grilled meat.

  • 1 seedless cucumber, washed and cut into 1/2" dice
  • 1/2 of 1 medium mango, cut into 1/3" dice
  • 1/2 cup drained and rinsed black beans
  • 2 TBS fresh lime juice
  • 2 TBS orange juice
  • 1 TBS finely chopped fresh cilantro
  • 3/4 tsp salt
  • 1 jalapeno pepper, seeded and finely chopped

In a large bowl, toss all ingredients. Let stand 10 minutes for flavors to blend.
