Puff Pastry Dough
5 lbs All-Purpose Flour
5 lbs Unsalted Butter
2.5 lbs Ice Water
1/4 oz Salt
Mix all ingredients, except 4 pounds of butter.
Mix well into a smooth dough.
The 4 pounds of butter, you roll into the dough.
Square the dough, fold butter into the dough.
Make a square envelope and roll the dough 2x3 and 2x4 while you let the dough rest in between.
Cream Cheese Filling
12 oz Cream Cheese
12 oz Unsalted Butter
3 cups All-Purpose Flour
1/4 cup Sugar
1/2 teaspoon Salt
Mix sugar and cream cheese, then add softened unsalted butter and then add the flour.
