1 large Nest Fresh Aunt Mattie's organic chicken
6-8 garlic cloves, peeled and crushed
2 tablespoons rosemary, chopped
1 lemon
1 teaspoon crushed red pepper
Fresh ground black pepper
Salt, to taste
1/4 cup Olive Oil
(Have your store butcher) split the chicken and remove the backbone, leaving the breast intact. Lay open, skin down and remove breast plate, to enable flattening of the bird. Move to a large pan for marinating.
In a small bowl, combine remaining ingredients and then pour over the flattened chicken. Turn chicken over several times to coat evenly with marinade. Refrigerate for several hours then let stand at room temperature 30 minutes prior to grilling.
Grill chicken slowly over medium-low heat for 20 minutes, turning several times and basting with remaining marinade.
