October 4: Biju's 10 Minute Green Chili

I’ve wanted to do a stripped down and very simple green chili recipe for a while. So here it is. Just six ingredients plus one pot, no wrong answer if you want to change the proportions or get creative with ingredients. This is the basic idea, and it works perfectly.

Fire roasted “hatch” green chiles are fantastic, but most stores will have some sort of cut and peeled chiles in the freezer section, fresh chiles will do nicely, and if all else fails, canned diced green chiles work perfectly.

Ingredients:
1 lbs cubed pork + 2 tablespoons of flour for dusting
2 tablespoons Mexican / taco / green chili spice mix
½ medium onion large dice
1 cup peeled and diced green chiles (mild or hot)
1 cup / 12 oz can of tomatillos, keep half the liquid, puree in blender
1 cup chicken stock or warm water as needed

Method
  • Begin by combining flour and spice mixture, thoroughly coat pork cubes, then in a deep heavy bottomed pan brown on medium / high heat. Once the meat is evenly brown, add the onions until the are clear, about 5 minutes.
  • add in green chiles, stir mixture together roasting the peppers a bit
  • add in pureed tomatillos
  • add in chicken stock or warm water

    The above steps should take about 10 minutes. Cover and let simmer on medium heat until the pork is tender to the bite. About 45 min to 1 hour. Adjust with salt / cayenne / pepper.

    Serve with warm tortillas, cheese, sour cream, fresh chopped onions and cilantro.
