September 13th: Mesa Style Chicken Fried Steak
Mesa Style Chicken Fried Steak
1 cup masa harina (corn flour)
1/2 cup all purpose flour
1 tsp. ground cumin
1 tsp. dried oregano
1 tsp. garlic powder
1/2 tsp. salt
2 eggs
vegetable oil, as needed for frying (or a combination of oil and butter)
4 thin beef cube steaks, 4-6 oz each
In a shallow plate, combine the masa harina, flour, cumin, oregano, garlic powder, and salt. Lightly beat the eggs in another shallow plate until blended.
Dip each cube steak into the flour mixture and shake off excess. Dip into the beaten egg, drain and then dip into the flour mixture. Can be done several hours ahead and chilled.
Preheat pan over medium high to high flame, add oil as needed and pan fry the steaks, turning once - about 4 minutes per side (depending on thickness and temperature).
