Avocado Tostadas

  • 4 corn tortillas
  • 1 cup refried beans (from a 16-ounce can)
  • 1/2 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1 ripe Mexican Hass avocado, halved, pitted, peeled and thinly sliced
  • 1/3 cup grated Pepper Jack cheese

Preheat oven to 350 degrees. Place tortillas on a greased baking sheet. Bake, turning once, until crisp, about 10 minutes. Cool. Spread refried beans on top side of tortillas, dividing evenly. Arrange lettuce, tomatoes, avocados and cheese on top. Add dollop of sour cream and chopped cilantro, if desired.

YIELD: 4 portions
