June 28th: Garden Fresh Tomato Soup with Toasted Almonds

Garden Fresh Tomato soup with toasted almonds

-4 medium vine ripened tomatoes, quickly poached in hot water and peeled
-2 tablespoons red wine
-2 tablespoons balsamic vinegar
-1/2 fresh lemon juiced
-1 sprig of fresh basil
-1 teaspoon chopped garlic

combine ingredients and pulse in blender, add salt and fresh cracked pepper for taste
then garnish with: any or all
-minced onion
-grated parmesan
-fresh basil

Toasted Almonds
-1 cup raw almonds
-sprinkle of brown sugar
-sprinkle of coarse salt
-small dash of cayenne
in a shallow, ungreased pan, heat raw almonds until the begin to darken, about 4 - 5 minutes, watch closely so not to smoke. Set aside. Til cool enough to handle, but still warm. Toss in the seasonings, while warm thoroughly coat and let rest.
