May 31st: Argentine Style Grilled Pork

Argentine style grilled Pork

1 large piece pork shoulder 3- 5lbs (butt)
1 cup Kosher Salt
4 tbls fresh ground black pepper
(coat meat generously)

grill on med / high heat, approx 1.5 hours

Chimichurri Sauce
1 cup (packed) fresh Italian parsley
1/2 cup olive oil
1/3 cup red wine vinegar
1/4 cup (packed) fresh cilantro
2 garlic cloves, minced
1 teaspoon dried crushed red pepper
1 teaspoon fresh ground pepper
1/2 teaspoon Kosher salt

Serve with fresh French style bread dip bread in sauce and also use for meat
