Tonkatsu Glazed Pork Chops

Make simple pork chops exciting with applesauce-based Tonkatsu sauce, also makes a great sandwich - an American version of a Japanese classic.

4 thin pork loin chops, bone in or boneless, about 3/4 inch thick
Tony's Sassy Cilantro Seasoning, Rotisserie Chicken Seasoning, or Caribbean Seasoning - to taste (also great with Tom Douglas' Tokyo Rub or salt and pepper)
Cooking spray or canola oil
1/4 cup Tonkatsu Sauce, or as needed (available at Tony’s)
2-3 cups finely shredded cabbage

Choose thin pork chops with or without the bone. Boneless pork chops are a good choice if you'd like to make Tonkatsu Pork Sandwiches. Season chops lightly with one of the suggested seasonings.

Preheat a medium to medium high grill and brush clean. If cooking indoors, preheat a heavy skillet or grill pan over medium heat. Mist cooking grate or pan with oil and immediately add cutlets.

Brown pork chops on first side, turn and brush or drizzle with Tonkatsu sauce and continue to cook until just done - about 8 minutes total, depends on chops and conditions - do not overcook! Baste with sauce as desired.

Prepare a plate or soft hamburger bun with a bed of finely shredded cabbage and top with hot pork chop. Drizzle with more sauce, if desired, and serve. Serves 4.
