March 22nd: Mango Bearnaise

Mango Bearnaise
Fresh Tarragon Leaves 1 tsp
Fresh Chopped Shallots 1 each
Mango Chunks 1 cup
White Wine 1 ½ cup
White Vinegar 3 tsp
Sugar 3 tsp
Egg Yolks 5each
Clarified Butter 4-6 oz
Kosher Salt To Taste
White Pepper To Taste
Tabasco Sauce 3 to 4 Drops

Place all ingredients into a blender and mix
Add egg yolks. Clarified butter until emulsified
Adjust seasoning with kosher salt and white pepper
Add tabasco sauce
