Caribbean Turkey Wings and Thighs

  • 2 boneless, skinless turkey thighs
  • 2 turkey wings
  • 1/4 cup fresh orange juice
  • 1 tsp grated orange peel
  • 1 TBS olive oil
  • 1 TBS fresh lime juice
  • 1 tsp grated ginger root
  • 1 clove garlic, minced
  • 1/4 tsp hot pepper sauce
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp pepper

In large shallow bowl, mix together orange juice, orange peel, olive oil, lime juice, ginger, garlic, hot pepper sauce and oregano. Add turkey turning to coat. Cover and marinate in refrigerator for at least 3 hours or overnight. Remove from marinade and sprinkle with salt and pepper.

Grill very slowly, preferably using a charcoal fire with several additions of wood chips. Long, slow grilling will make for more tender meat.
