Bison Bacon Guacamole Burger

4 Beef or Bison Patties
Tony’s Southwestern Steak Seasoning
8 slices Tony’s bacon
4 slices Pepper Jack or Sharp Cheddar
6 TBS guacamole
Tomato slices, lettuce leaves
Whole wheat buns, or your favorite rolls
Ketchup, hot sauce
Season patties with Tony’s Southwestern Steak Seasoning, or salt and pepper, and grill over a medium direct flame. When patty is ¾ done, add cheese, remove from grill at medium well and rest for 5 minutes as you toast the buns.Meanwhile, cut bacon slices in half and fry to taste.
Assemble in this order: Bottom bun, lettuce leaves, tomato, patty, bacon, guacamole, top bun. Serve with ketchup spiked with Chalula, or your favorite hot sauce.– Chef Mick Rosacci, Tony's Market
