Feb 7: Mini Cuban Sandwiches

Serves 6
Recipe by Chef Andres Jimenez, Executive Chef for The Ritz-Carlton, Denver


Ingredients:
1 loaf of Cuban bread (French bread my be used if Cuban bread is not available)
1 lb sliced Virginia ham
1 lb pulled pork
9 slices of Swiss cheese
9 sliced dill pickles
2 tbsp yellow mustard Butter, Black pepper to taste


Steps:


1. Pre-heat sandwich or panini press at medium heat.
2. Slice the Cuban bread in half. Spread the mustard on one side of the bread and then layer the cheese, pickles, ham and pulled pork.
3. Put the sandwich by together by topping it with the other half of the bread.
4. Press the bread down and spread butter evenly across the top part. 5. Cut into smaller mini sandwiches and grill in sandwich press until bread is golden brown and crispy - and until cheese is completely melted. Enjoy!
