Feb 7: Breaded Pork Tenderloin Slider

Serves 6
Recipe by Chef Andres Jimenez, Executive Chef for The Ritz-Carlton, Denver


Ingredients:


1¼ lb. Pork Tenderloin
¾ c. Panko bread crumbs
3 tbsp finely chopped parsley
½ tsp garlic powder
½ tsp onion powder
2 whole eggs whisked
¼ c. whole milk
½ c. all purpose flour
2 tbsp vegetable oil
6 warm slider buns
6 slices of tomato
1 bib lettuce
Salt and Pepper to taste


Steps:


1. Cut the tenderloin into 3 oz thin slices.
2. Line slices in between two sheets of plastic wrap and with a meat mallet or heavy spoon, pound meat gently to flatten to the same thickness.
3. Mix bread crumbs with parsley, garlic and onion powder and season with salt and pepper.
4. Mix eggs and milk together.
5. Bread the tenderloins by passing them through flour, then dipping them though egg mixture, and finally through bread crumbs mixture.
6. Use skillet to cook at medium heat with vegetable oil for about 3 minutes on each side.
7. Serve on a warm slider bun topped with a slice of tomato and lettuce and the condiments of your choice. Enjoy!
