September 13th: Can't Wait Salsa

Can't Wait Salsa

Perfect for when you arrive home with fresh roasted Musso's green chiles and you can't wait to enjoy them!

3-4 large green chiles, freshly roasted
1 large, ripe tomato
1/2 onion
juice of 1/2 lime
1/4 - 1/3 cup ex virgin olive oil
minced jalapeño, optional
pinches of salt, pepper and sugar to taste

As soon as you get home with your fresh roasted chiles, peel and remove the seeds and veins from several, then chop into pieces of small, medium and large size. Warm in microwave.

Chop tomato and onion into small and larger pieces (I like to cut half into thin slivers and mince the other half) and add to warm green chiles. Stir in remaining ingredients, adding pinches of sugar to help balance excessive heat. Serve immediately, or let it rest an hour at room temperature if possible.
