September 6th: Halibut Tiradito
Halibut Tiradito
Serves 6
Recipe by Chef Andres Jimenez, Executive Chef for The Ritz-Carlton, Denver
1 lbs. very fresh halibut filet
¼ Cup finally slices red onion
1 Tablespoons minced garlic
4 Tablespoons sesame oil
3 Tablespoons lime juice
2 tablespoons finely chopped cilantro
¼ cup very finely sliced green onions
Toasted sesame seeds, Salt, fresh black pepper.
Steps:
1. Cut the fish in very thin slices (do ask the attended at the fish counter to help you with this)
2. Place them flat on the serving dish and top the fish with red onion and garlic
Just before serving:
3. Heat the sesame oil until very hot and drizzle the hot oil over the fish and the lemon juice.
4. Garnish with the chopped cilantro, green onion and toasted sesame seeds
5. Season with salt pepper to taste.
