August 30th: Grilled Peaches & Cream

6-8 ripe peaches
sweet dessert wine
1 cup whipping cream
sugar, vanilla
raspberries or blackberries

Peel and split peaches, place in a Ziploc bag with enough wine to cover and marinate at room temperature for 30-60 minutes. Place peaches on an oiled grill pan or clean outdoor grill, cooking over medium heat to mark and warm slightly. Reduce wine to a glaze. Drizzle plates with glaze and top with peaches.

Whip cream with a splash of vanilla and just enough sugar to lightly sweeten. Dollop cream over peaches, garnish with mint and fresh berries and serve with dessert wine. - Chef Mick Rosacci, Tony's Market
