August 23: Grilled Pork Loin

Grilled Pork Loin with Colorado Peach Chutney

1lb pork loin or chop, rubbed with good sprinkle of salt, pepper and coarse sugar

Chutney:
4-6 medium peaches, chopped into large pieces
½ cup sugar
½ cup vinegar
½ fresh lemon juiced
1 jalapeno chopped
1 teaspoon chopped fresh ginger
½ onion chopped
2 teaspoons salt

Cook peaches and all ingredients together on a medium-high heat until it is all soft, and the sugar has caramelized, changing the color to a bit darker. Let cool, run in food processor.

To Finish:

Take 2 tablespoons of chutney and mix in equal amount of olive oil for a glaze

Grill Pork to at least medium or medium well, finish cooking by brushing generously with glaze, let rest for a few minutes before slicing. Then top with chutney, serve with grilled bread and your favorite sides !
