August 23: Strawberry And Roasted Chicken Salad

Salad: Prepare just before serving

1 cup cooked and shredded chicken, the rotisserie chicken at your market will do nicely
1/2 cup fresh strawberries, thinly sliced
2 cups loosely packed butter leaf lettuce, pulled into small pieces
1/4 cup red onion, thinly sliced

Dressing: this can be prepared ahead and kept in the fridge

1 fresh lemon, juiced
2 tablespoons honey
1 tablespoon white or apple cider vinegar
Mix thoroughly, drizzle in 1 tablespoon light olive oil, salt and pepper to taste. (Fresh thyme is a great finishing touch.)

To plate: layer plate with greens and onions, then strawberries on top, toss chicken in dressing, then spread over greens with remaining dressing. Salt and pepper, fresh parmesan, grilled bread, and enjoy!
