July 5th: The Ultimate Brat
The Ultimate Bratwurst
Tony’s Milwaukee style bratwurst simmered in beer, grilled and served on a toasted garlic bun with Swiss and braised onions.
Two medium onions, sliced
3 lbs fresh Tony's Bratwurst
1 bottle of full flavored beer (optional)
pinches of sea salt and pepper
2-3 TBS Garlic butter, softened
6 Tony's Pretzel Rolls or buns
6 slices Gruyere Swiss cheese, room temperature
Bavarian Mustard
Slice onions and arrange in the bottom of a casserole or roasting pan and top with fresh bratwurst. Add beer and enough water to cover, or just use water. Cover pan with a lid or foil and roast or indirect grill at about 350 degrees until done, about 40 minutes.
Drain beer and remove brats. Add a pat of butter or a drizzle of oil and sauté onions – taste and adjust with salt and pepper if desired.
Brush or mist cooking grates with oil and grill brats over medium high coals just to brown - take care not to pierce the skin. Meanwhile, brush insides of buns with garlic butter and toast on grill. Add Swiss to center of buns while you toast the bun's backsides.
Serve brats on toasted buns with cheese, topped with Bavarian mustard and sautéed onions - perfect with grilled corn, potato salad, beans and cole slaw.
