May 31st: Spice Rubbed Chicken With Peach Chutney

Spice Rubbed Chicken with grilled peach Chutney
RUB (this is a lot more than you’ll need for this dish, but will keep in your cupboard for a long time)
1 cup brown sugar
3/4 cup coarse Kosher salt
1 tablespoon garlic powder
1 tablespoon fresh ground pepper
1 teaspoon nutmeg
1teaspoon cinnamon
1 teaspoon cayenne pepper
mix thoroughly
1 medium / large whole Chicken
coat whole chicken inside and outside generously with rub, let sit in fridge for about 1 hour. Then on medium heat over grill or in roasting pan in oven at approx 375. will take approx 45min – 1 hour to cook thru.
SAUCE
3 ripe local peaches ( cut in slices)
1 jalapeno chopped
1/2 cup golden raisins Chopped
3/4 cup apple cider vinegar
1/2 cup brown sugar (packed)
2 tablespoons molasses
1 tablespoon yellow curry powder
1 teaspoon cinnamon
1 teaspoon all spice
Grill peaches then chop coarse
combine all ingredients in a medium sauce pan
bring to a simmer
reduce heat
run in food processor or blender to make smooth, adjust flavor
with salt and pepper
