My 17th: Cherry Tomato Salad

1pt Heirloom Cherry Tomatoes
2 each Shallots
½ C Garlic Croutons
1/2 C Goat Cheese
2T Basil Pesto
2T Balsamic Vinegar
3T Olive Oil
1t Salt & White Pepper

Rinse the tomatoes in cold water and then slice in ½. Toss with sliced shallots, Garlic Croutons,
Basil Pesto and goat cheese. Then add the Balsamic and Olive oil, season with Salt and Pepper and place on plate
