May 3rd: Banana Pancakes

Banana Pancakes
1 cup all purpose Flour
1 tablespoon Sugar
2 teaspoons baking powder
¼ teaspoon salt
¼ teaspoon vanilla extract
1 egg beaten
1 cup milk
2 tablespoons melted butter
2 ripe bananas, mashed

Method:

In a medium bowl mix flour, sugar, salt and, baking powder. In a seprete bowl mix eggs, milk, mashed bananas, melted butter and, vanilla extract.

Whisk flour mixture in to banana mixture until smooth.

Heat a lightly buttered griddle or frying pan over medium high heat. Scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.
